Have you tasted ume before? It’s a type of Japanese plum, both bitter and sweet. Here, it’s been perfectly paired with other real juices, herbs and botanicals. Everything is steeped together for maximum flavour extraction, then lightly carbonated. Prepare to be transported somewhere new. Somewhere at once familiar and exotic. A memory from childhood. Fruits and flowers. An open field. The word 'soda' doesn’t do it justice. What would you call it? 

A balanced blend of tart and sweet with notes of apricot, plum and pear followed by notes of subtle, fragrant citrus. A floral, lavender finish adds an additional layer of depth to this already complex, yet wonderfully balanced, drink.
