No easy feat. It isn’t white, because we use coconut sugar and maple sugar to sweeten- they are unbleached and have bits of minerals in them which retain their color. Five stars and two thumbs up from some very discerning chocolatiers!
Made from fairtrade and organic ingredients
Zimt only uses chocolate that is good and fair for consumers and for farmers. Zimt gets their cacao from Ecuador and from Peru (certified by Transfair). When you buy chocolate that is Fairtrade certified, you support small-scale farmers and workers. Zimt also only uses organic ingredients which are pesticide and herbicide-free and full of flavor.
Raw chocolate vs. regular chocolate
Raw cacao has recently gotten a lot of attention. Some tests, including those by the United States Department of Agriculture, show that raw cacao has some of the highest levels of antioxidants of any food. The main difference between raw chocolate and regular chocolate, processing wise, is that the cacao beans in raw chocolate are not roasted, nor do they reach temperatures above about 49 °C. This number is considered by many to be the point at which digestive aiding enzymes can stay alive in most foods though this does vary greatly depending upon the food!
What about the coconut sugar?c
Coconut sugar is full of nutrients, including magnesium, potassium, zinc, iron, B vitamins, and amino acids. Unlike with cane sugar, no nutrients are removed in the processing of coconut sugar, leaving all of these nutrients intact. Coconut sugar shows a lower range of 35 to 54 on the GI scale per serving than other sugars, such as refined white sugar, molasses, and muscovado sugar that show a range of 65 to 100. Coconut palms also require very little water to grow, and produce an average of 50-75% more sugar per acre than cane sugar and use less than 1/5th of the soil nutrients and water for this production.
