1) The quality of the ingredients

Great chocolate starts with great cacao

Producing chocolate that is complex in flavour means sourcing high-quality cacao. It starts from the moment the tree is planted and continues to the time of harvest, proper fermentation and drying. It is important the beans are well-sorted to ensure the majority are similar in size, there are no flat beans and zero insect infestation or damage. That is one of the reasons why we spend a couple of extra bucks sourcing the best cacao out there!

 

2) The quality of connections

It’s not only about where we source from, it’s about who we source from. Meeting and learning from farmers, suppliers, and customers alike.

To achieve quality, we need to understand how the farmers grow and process their cacao. Through our recent origin visits, we have begun to gain insight into how we can help both the farmers and their surrounding communities. Through proper feedback, we are able to give them the tools to create a better product. We value building strong relationships with suppliers and customers alike.

 

3) Care about the environment

Chocolate cannot exist without a cared for environment.

This year we have set a goal to be zero waste at our roastery and cafe. To reach this goal, we are looking at all aspects of our business; where and how we receive the raw supplies to make our chocolate and baked goods all the way to packaging, shipping, storage, and suppliers.

Everything we make in our shop is made by hand. Our team works together to ensure all of our chocolate, baked goods, and coffee are consistently delicious. We embrace technology to deliver efficiency in the chocolate-making process and rely on our senses to find the best flavour and texture possible.

Imagining chocolate with no limits allows us to create unique flavour combinations, discover effective processing methods, and most importantly, satisfy our curiosity by asking ‘what if’.

We always set aside time to have fun, and by fun, we mean playing around with chocolate! For us, it’s about creating something that is flavourful yet balanced.

 

About Soul Chocolate

We are grass-root explorers, and we just happen to love cacao. Years ago, while touring New Zealand we stumbled upon a tiny cafe in Wellington, which opened up our minds to the complexity of specialty chocolate.

After deciding to build our own business, we launched Soul Chocolate in Toronto, Ontario. Our chocolate highlights the origin of the cacao itself (where the farmers worked so hard to produce an amazing product) alongside the unique subtleties added from both roasting and refining. Each chocolate is truly unique.

We have also had the privilege of learning about cacao at the origin, understanding not only how it is grown but who grows it. Our goal is to create 100% Direct Trade relationships for all of our cacao, offering far higher and fair prices for the farmer’s incredibly hard work.

  • We rely on the information made available by the manufacturers and cannot guarantee accuracy under all circumstances. Manufacturers, e.g., might change recipes or production facilities without notifying us.
  • If you have serious and/or life-threatening allergies, please always double check with the manufacturer.

Vegan-certified vs. vegan-friendly products

All products sold at FAIR/SQUARE are free from animal-derived ingredients and have never been tested on animals.

  • Some products show a vegan certification logo. This means that they have been made in a production facility dedicated to vegan products and have been certified by an independent 3rd party organization.
  • Some products show only the word 'vegan' on the packaging. This means that the manufacturer guarantees that the product does not contain animal-derived ingredients but they did not go through the process of third party certification (yet).
  • Some products are 'accidentally vegan' or vegan-friendly. This means they do not contain ingredients of animal origin but they could have been made in a facility that makes other products containing animal-derived ingredients such as milk, eggs etc.
  • Due to industry regulations in regards to allergies, you may find a warning such as 'may contain: milk' under the ingredients list. This does not mean milk is in the product, but there's a slight chance of cross-contamination.
